Wings ROCK!!

Wow what a crazy few weeks.  While in Spokane last week, my mother and I were rear ended.  Thankfully it seems like we will both be fine after a few month with a chiropractor.  Since the accident, my family has lived on fast food and hot dogs because standing over the stove was not an option. However, I found this recipe on tumblr and decided that it would be worth it to bear the pain....MAN O MAN was I right!!

Brown Sugar Wings with Red Pepper Sauce

Grilled Zucchini "Fries" with
Greek Yogurt Ranch
To say that it was delicious would be a disservice to how good it actually is.   I mean we are talking the perfect blend of spices and freshness that makes it real man's man type of meal.  The wings distract the men folk in my life from really seeing that I have also included veggies on their plates.

I basically used the exact recipe that Damn Delicious posted, but quadrupled the measurements since the boys love them some leftover wings for lunches later on.
 
Baked Brown Sugar Chicken Wings with Roasted Red Pepper Dipping Sauce
(taken from Damn Delicious and Domestic Fits)
  • 2 pounds chicken wings
  • 2 tablespoons olive oil
  • 2 teaspoons brown sugar
  • 1 teaspoon onion powder
  • 2 teaspoon garlic powder
  • 2 teaspoon chili powder
  • 2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/3 cup roasted red pepper, chopped
  • 2 ounces goat cheese
  • 2 tablespoons sour cream
  • 1/4 teaspoon salt
DIRECTIONS:
Preheat the oven to 425 degrees F. Line a baking sheet with foil.
In a large bowl, combine the wings, olive oil, brown sugar, onion powder, garlic powder, chili powder, paprika, salt and pepper.
Place the wings onto prepared baking sheet and bake for 25 minutes, using metal tongs to turn at halftime.
To make the dipping sauce, combine the roasted red pepper, goat cheese, sour cream and salt in the bowl of a food processor until emulsified.
Serve wings immediately with dipping sauce.

While all that was cooking I prepped my zucchini "fries".  Now I called them fries since my 9 year old will eat basically anything as long as it has the word fries attached to it, but this is basically grilled spears of zucchini with olive oil that is then seasoned lightly with salt and lime zest.
